This simple alpha-diketone is characterized by its two carbonyl groups located at the second and third carbon atoms of the butane chain . It appears as a clear yellow to yellowish-green liquid with a powerful, diffusive, and intensely buttery aroma, especially noticeable in very dilute solutions . As a prized ingredient in the flavor industry, it is officially recognized as a safe flavoring substance by the Flavor and Extract Manufacturers Association (FEMA) under number FEMA 2370 and has been evaluated by the Joint FAO/WHO Expert Committee on Food Additives (JECFA) with the number JECFA 408 . In the United States, it is listed in the FDA's Substances Added to Food inventory under 21 CFR 184.12786

    Storage conditions for 2,3-Butanedione
